In 1990, Claudio and his wife Gayle founded Claudio’s Specialty Breads in Castroville, California. The bakery is a family-operated wholesale bakery specializing in traditional Italian breads, breadsticks and pastries, as well as sourdough.
Claudio is a third generation baker from the Piemonte Region of Italy. The original Fratelli Cantore Bakery is still in existence, operated by his younger brother in the small Italian town of S’Antonino di Susa.
In addition to being a master baker, Claudio is a consultant and an excellent teacher. He has assisted numerous bakers and bakeries throughout the United States, as well as held special baking classes at the bakery. He has specialized in working with chefs and restaurateurs to develop signature breads for their menus and one of a kind items for private parties.
